My goal is to share with you my journey to a healthier lifestyle. One of the main things I love in life is FOOD, especially when I can make it healthy, and ahead of time. So, what better time to make soup then during this rainy, fall season.
I have become very fond of my crock-pot, and take advantage of it as much as I can. It’s such an exceptional product when making soups because the flavors tend to set in more, and it’s delicious. This week on healthy eating is: Pozole Soup.
This recipe is from Once-a-Month Cooking – Family Favorites cookbook by Mimi Wilson and Mary Beth Lagerborg. I have tried it many times, but have recently modified it to reduce the salt, and make it healthier.

My modifications to this recipe:
I reduced the broth to only 4 cups to create a chunkier soup. I used 1 can of low-fat refried beans instead of the beans listed. I also did my own seasonings rather than taco seasonings since I wanted less salt. And you can easily use less cheese. Made 5 servings
Ingredients
- 1/2 C chopped onion
- 1/2 tsp chopped garlic
- 1 Tbs vegetable oil
- 2 C de-boned and shredded rotisserie
- 1 48 oz (6 cups) carton chicken broth
- 2 15 oz cans hominy or Great Northern beans, drained
- 2 tsp dried oregano
- 1 1-oz package taco seasoning
- 1 4-oz can chopped green chiles
- 1 C (4 oz) shredded Monterey Jack cheese*
- Salsa*
- Tortilla chips*
Instructions
- Saute the onion and garlic in the oil.
- Pour into slow cooker with the remaining ingredients and mix together.
- Cook on low 3 hours.
- Serve with shredded cheese, salsa, and crushed tortilla chips sprinkled on top of the hot soup.
