Mother’s Day is around the corner – what will you be cooking for mom? The thought of going out seems like a hassle these days because restaurants are booked and overloaded. So, I like to start at home by whipping up these quick & easy brunch recipes for Mother’s Day.
If you’re feeling ambitious, try making all of it! There can never be too much breakfast. Enjoy!
Ginger & Lemon Breakfast Drink – This is a delicious and healthy drink in the morning for a good start to the day.
Ingredients:
2 slices unpeeled ginger, about 1/8inch thick
1 slice lemon, about 1/8 inch thick
1 tsp clear honey
Boiling water
Instructions:
Place the ginger and lemon slice into your favorite mug. Add the honey and fill with boiling water. Stir well until the honey has dissolved. (Serves 1, double or triple recipe to make more).
Delicious Breakfast Yogurt with Fresh Tropical Fruit – I love to make this because it’s so easy. You can use any fruit you’d like.
Ingredients:
1 cup low-fat plain yogurt (or Vanilla yogurt)
1/2 cup of fresh tropical fruit of your choice (mangoes, pineapples, oranges etc), chopped
Mint leaves
Low-fat granola
Cinnamon powder to taste
Instructions:
Pour yogurt into a bowl and beat until smooth. Arrange the yogurt in a tall glass, top with fruit chunks and some granola and sprinkle with cinnamon. Garnish with mint leaves.
Blueberry Lemon Lime Pancakes
Ingredients:
1 C. diet lemon-lime soda
¼ C. plain fat-free yogurt
1 C. and 2 Tablespoons frozen blueberries, thawed and drained
1 ½ C. reduced-fat baking mix
Butter flavored cooking spray
Directions:
In a medium bowl, combine diet soda and yogurt. Stir in blueberries and add baking mix. Mix well. Coat skillet with cooking spray. Pour batter (with ¼ C. measure) onto a large hot skillet. Brown pancakes on both sides. Serve with favorite topping. (Serves 6)
French Vanilla Toast
Ingredients:
1 large egg
1/2 cup skim milk
1 tsp vanilla
4 (1 inch thick) diagonally cut slices of French bread (about 4oz)
2 tsp margarine
1 1/2 tsp sugar
1/2 tsp ground cinnamon
1 cup freshly cut up fruit of your choice (kiwi, oranges, strawberries)
Instructions:
Preheat oven to 450∞F.
Grease a baking sheet and set aside.
In a shallow dish combine egg, milk and vanilla. Dip bread slices into the egg mixture until coated all over and place on the greased baking sheet. Bake in the oven for 15 minutes or until the bread slices are golden brown. Turn the bread over halfway through the baking time.
In the meantime, combine sugar, cinnamon and margarine in a small bowl and mix well. Spread over the French toast and top with fruit. (Yield 2)
Healthy Morning Basil and Egg Scramble
Ingredients:
1 tbsp olive oil
1/2 cup onion, chopped
2 cups cooked potatoes, cubed
1/2 cup red bell pepper, chopped
4 free-range, organic eggs, beaten
1 tbsp fresh basil leaves, chopped
Salt and pepper to taste
Instructions:
Heat the oil in a non-stick skillet and add potatoes, onion and bell pepper. Saute vegetables for about 5 minutes until heated through.
Meanwhile, in a small bowl, whisk together the remaining ingredients. Pour into the skillet with the vegetables. Let the mixture slightly set at the bottom, before gently lifting the cooked parts with a wooden spoon. Continue this procedure until the egg mixture is thickened and cooked through. (Yield 3)
Hash Brown Breakfast Casserole
Ingredients:
1 (32 oz) package of frozen hash brown potatoes
8 oz cooked ham, diced
2 (10.75 oz) cans condensed cream of potato soup
1 (16 oz) container sour cream
1 cups Parmesan cheese, grated
2 cups strong Cheddar cheese, grated
Instructions:
Preheat oven to 375 degrees F. Grease 9×13 inch casserole dish.
Combine cream of potato soup, sour cream, Cheddar cheese, ham and has brown in a large bowl. Mix well. Place into greased casserole dish, top with Parmesan cheese and bake in the oven for about one hour. The casserole should be nice and brown and bubbly. Serve immediately.
