When it comes to making a quick dinner, BBQ chicken with baked beans and artichoke is definitely on my list of favorites. I can’t deny the savory sweet flavors as it marinates in my mouth.  🙂
This recipe is filled with protein, fiber, and vitamin sources! And if you want to completely turn it around into a healthier version, leave out the BBQ sauce (on the chicken and baked beans). You can always make or use a dry rub on the chicken, and slow-cook your own baked beans. I used to dread cooking things like artichoke too, because I was afraid it wouldn’t come out right. But, once you know how to handle your vegetables, it’s more likely you’ll cook it again. Allow me to share with you this summer ready recipe that will be quite enjoyable!
BBQ Chicken with Baked Beans and Artichoke
Ingredients
- 1 pack of Chicken legs or thighs (Depending on your family size)
- 2 Artichokes
- 1 Lemon
- Season Salt
- Lemon Pepper
- Garlic Powder
- 1 Bottle of Sweet Baby Rays BBQ sauce (or any of your choice)
- 1-2 28oz. can of Baked Beans (any of your choice)
Instructions
- Steam the artichokes in water with the juice of one whole lemon for about 45 minutes.
- Season the chicken with a mixture of equal parts season salt, lemon pepper, and garlic powder. Place chicken on grill at medium/high heat with lid closed for about 10 minutes each side.
- In the last 5 minutes, baste in the BBQ sauce of your choice. Ours is Sweet Baby Rays. Allow the sugar in the BBQ sauce to caramelize - the sauce should be sticky and not run off the chicken.
- Choose one can of your favorite baked beans. Drain half to 2/3 of the juice from the can and place them in a small to medium pot on medium heat. Add 2 to 4 tablespoons of BBQ sauce. Heat until hot.
- Remove artichoke from steamed pot and baste with olive oil and place it on grill for about 5 minutes. Remove artichoke from grill and serve with mayo or aioli sauce.
