What is the difference between Olive Oil and extra-virgin Olive Oil? I recently read in my March 2012 issue of Clean eating the difference between olive oil and extra-virgin olive oil. According to the magazine, ‘extra-virgin refers to first cold pressing of olives to retrieve the oil – the resulting oil is unrefined and virtually unprocessed. To create regular olive oil, the oil is then processed which diminishes or removes many of the olive’s nutrients.’ Did you know that one of the most valuable nutrients lost is called oleocanthal? This is an anti-inflammatory natural compound that is similar in function to ibuprofen. So to get the maximum anti-inflammatory benefits, opt for the unrefined extra-virgin olive oil.
