We love green beans! We have them all year long, but a lot of traditions include green bean casserole to the holiday menu. What about green bean bundles instead? Their healthier and they make a beautiful side dish for any meal.
Green Bean Bundles
Green beans are a traditional holiday side dish, usually made as a casserole with cream of mushroom soup. This healthier green bean bundles side dish has made it onto our favorite dish list for the holidays.
The real key ingredient is the bacon. When it’s savoring with the beans as it bakes, you can already smell the salty flavors sinking in. There’s really no need for extra salt, but if you prefer, it doesn’t hurt to add just a pinch to your taste. I’d rather do turkey bacon then regular, but either way, it tastes amazing. What more more could you ask for? It’s a healthy dish with bursting flavors!
Ingredients
- 1 lb fresh green beans (I prefer Haricot Vert french green beans)
- 8 strips of turkey bacon (my hubby prefers real bacon)
- 1/2 finely chopped onion (I prefer more onion)
- 2 Tb olive oil (or real butter for a treat)
- 1 Tb white wine vinegar
- 1 Tb Xyla birch sweetener (or real sugar if you prefer)
- salt to taste
Instructions
- Steam the green beans until they are tender but still crisp.
- Wrap about 12 beans in each bacon strip, use toothpicks to secure.
- Place on a foil lined baking sheet and bake at 400 degrees for 12-15 minutes until the bacon is done.
- While bacon is cooking, saute onion in olive oil until tender. Add vinegar, sugar, and salt.
- Remove bundles and plate them with onion sauce over the top.
