This weeks meal makes me love summer time. A Mahi Mahi dinner is another favorite I must have at least four times a month. When the sun is shining, we take any chance we get at using the grill.
The Mahi Mahi is from Trader Joe’s as well as the rice medley. Can you tell I like a lot of their food products. I probably have to make a stop at Trader Joe’s at least twice a week for small snacks and sometimes frozen foods.
For this particular dish, it was really about light seasoning, fresh grilled asparagus, fresh avocado, and rice medley. I seasoned the Mahi Mahi with garlic salt, lemon pepper and a little bit of chipotle pepper. You don’t want to over season it because fish tends to soak up more flavors while cooking. And sometimes, it can turn out a little salty. So, just a pinch of each seasoning should do the job, and while it’s grilling, squeeze some lemon juice on top of it.
Now, this is a must have. I highly suggest it to Trader Joe’s regulars, or even new one’s. Depending on your taste, season as you like, and remember to savor every bite!
