Cobb salad is a quick, easy and healthy option for dinner. I have to admit my husband isn’t the biggest fan of salad for dinner so we try and make our Cobb salads full of all kinds of goodies. Here’s what we typically put on ours: avocados, hard boiled eggs, crispy bacon, sliced tomatoes and grated cheddar cheese. I sometimes like to use feta cheese if we have it. Don’t let the look of this plate fool you, as there is lettuce under all of that goodness, I promise. When it comes to dressing, we like to mix up our own ranch. It’s a packet that Hidden Valley sells and you just add 1 cup of milk and 1 cup of mayonnaise. My husband likes to mix in the dressing, whereas I like to dunk each scrumptious bite in the dressing. I love, love, love Cobb salad. I usually add chicken and black olives to mine and give the hard-boiled egg to my husband. I also like blue cheese dressing on mine: 1 part mayo, 1 part sour cream and blue cheese crumbled in. Yum!
