Are you ready for summer? As you know, I love food, and when I find a great recipe, I like to share it. Summer is right around the corner, so what better recipe is there than a Summer Coleslaw. I found it in last year’s July/August issue of Health magazine and have made it twice now. It’s been fantastic both times. However, I have slightly modified this one, too, and it still tastes amazing!

Throw in one last summer recipe before Fall. Get this summer coleslaw recipe and my modified version to bring back a feel of summer in an instant!

This recipe makes 4 servings, and each serving is only 185 calories, but is totally filling. Rather than slice/shred the cabbage and carrots, I just bought the coleslaw already in the bag. Using fresh parsley knocks up the flavor as well. And, as you can see, I tossed in some cherry tomatoes and some shredded chicken (which will up the calories but figured the protein was a good added touch). I have to say, I was really surprised at how awesome this salad tasted!
